Here are some great healthy snacks to help you power through this Christmas season and past all those sugar-filled Christmas treats!

Frozen Citrus Fat Bomb

Ingredients

½ cup cream cheese softened (can substitute with coconut cream)

½ cup creamed coconut milk

1 cup coconut oil (ev)

1 tsp lemon zest

4 tbs lemon juice

1 tbs lime zest

4 tbs lime juice

½ cup powdered Swerve or Erythritol

2 drops of liquid stevia or glycerine

1 tbs lemon extract

Directions

  • In a bowl mix cream cheese and coconut cream
  • Melt coconut oil in a small saucepan, add powdered erythritol. Dissolve and then add the lemon extract
  • Grate the lemon and lime and then juice them. Add the juice and zest to the saucepan
  • Pour mixture in sauce pan over the cream cheese and coconut. Mix well
  • Place molds of ice cube trays on baking sheet. Fill each mold with 2 tbs of the mixture and place in the freezer for 1.5-2 hours
  • Pop the freezer meltaways out of the trays and store them in an airtight container in the freezer

 

 

Keto Cheesecake Bites

Ingredients

¾ cup almond flour

½ tsp cinnamon

2 tbs butter or ghee

20-30 drops of liquid stevia

1 ½ cups of cream cheese

2 large eggs

1 tsp unsweetened vanilla extract

1 tbs lemon juice

Directions

            Crust

  • Preheat oven to 400֯
  • In a mixing bowl stir together the almond flour and cinnamon
  • Add melted butter and a few drops of stevia. Mix well
  • Using a spatula press the crust to 2 silicon muffin molds
  • Bake for 7-10 minutes, DO NOT BURN

 

Filling

  • Mix softened cream cheese, eggs, and s/f vanilla. Add the stevia
  • When the crust is done, remove from the over and reduce the oven to 350֯
  • Scoop the cheese mixture into the molds and place them back into the oven with a small bowl of water
  • Bake for 20 minutes. Remove from oven and allow to cool

Cookies and Cream Fat Bomb

Makes 1 dozen

Ingredients

Non-stick cooking spray

 

Cookie Crumbles

1 ¼ cup almond flour

3 tbs cocoa flour

½ tsp kosher salt

3 tbs granulated Swerve

4 tbs melted ghee

2tsp pure vanilla extract

 

Filling

4oz cream cheese, softened

½ c heavy cream

3 tbs granulated swerve

1 can coconut cream

1 tsp vanilla extract

 

Directions

Cookie Crumbles

  • Line a muffin pan with cupcake liners and spray with cooking spray
  • In a non-stick skillet, toast almond flour until golden. Add cocoa powder, salt, and swerve. Mix in melted ghee and vanilla
  • Fill each liner with heaping TBS of chocolate cookie mix, pressing into a crust with measuring spoon. Place remaining mixture in freezer for 20 minutes

Filling

  • Using a hand mixer or whisk, mix cream cheese, heavy cream, Swerve, coconut cream, and vanilla until fluffy
  • Spoon evenly over the chocolate cookie mix
  • Crumble the frozen cookie mix over the cream cheese mix.
  • Freeze for 3 hours before serving
